THE STORY

IRIS ESTATE

Some partnerships are built in meeting rooms. Ours was built across espresso bars, brew stations, and years of crossing paths around the world — from SCAJ in Tokyo to World of Coffee in San Diego — through a shared pursuit of precision and hospitality.

As this collaboration took shape, Onyx sent Weber three coffees for a blind tasting. Quetzal, named after the majestic bird that graces Panamanian coffee farms, stood apart immediately. Its clarity, structure, and vibrancy were unmistakable — a coffee that reflected exactly what both teams hoped this release could become.

That tasting led us to the famed Iris Estate in Panama.

Founded by Jamison Savage in the highlands of Volcán, Chiriquí, Iris Estate sits between roughly 1,850 and 2,300 meters above sea level, among the highest coffee-producing elevations in Panama. The combination of volcanic soil, cool mountain climate, and slow fruit development produces coffees with remarkable transparency and depth.

During harvest, the Onyx team traveled through Boquete and Volcán with Jamison to experience the farms firsthand. What became immediately clear was that the precision in the cup is not the result of processing alone, but of deep agricultural understanding, careful observation, and restraint. Every decision — from harvesting to fermentation to drying — is approached with intention, preserving clarity and terroir rather than overwhelming it.

Quetzal reflects those shared values. A coffee shaped through friendship, curiosity, and repeated attention to detail over time — where engineering meets ritual, and process exists to elevate origin rather than distract from it. We love it on the BIRD, but in reality the beans are so delicious they’ll shine on any brew method.
